Warming Winter Parsnip and Spinach Soup Recipe
We recently went on a tour around the Kitchen Gardens of Soho Farmhouse where the Head of Production, Katy Ayres, told us the history of the Soho Farmhouse gardens and gave us an insight of how the gardens are run sustainably and efficiently. Whilst we were there, Katy gave us a fantastic recipe which is perfect for cosying up with during winter.

Ingredients
5-6 large Parsnips (3-4 if they're as big as ours!)
2 large cloves of Garlic, peeled and halved
4-5 big handfuls of Spinach
2 litres vegetable stock (To reduce waste I make mine out of carrot tops, celery tops, onion tops and veg peelings, but any vegetable stock will do!)
1 tsp dried Coriander (or a large pinch of finely chopped fresh Coriander)
1 tsp ground Cumin
1 tsp Curry Powder
1 tsp dried Nutmeg
Salt and Pepper to taste
Recipe
Equally chop all the Parsnips and put in a saucepan along with the Garlic and vegetable stock.
Bring to the boil and then allow to bubble away until the parsnips are soft. (If unsure, stab the largest parsnip in the pan and see if it slides straight off the knife).
Once soft, stir in your Spinach and then remove from the heat.
Add in your Coriander, Cumin, Curry Powder and Nutmeg.
Mix with a hand blender until the mixture is smooth.
Add Salt and Pepper to taste. If you prefer a creamy soup then feel free to add a splash of cream to the top. Best served steaming with a fresh crusty roll (and a blanket on your lap!).
